WThis is an easy take on a beverage from the seasonal menu. Designed as a party-sized prepared mix that's bursting with the tastes of a festive period, making it excellent for a holiday party. Any leftover citrus syrup to use in morning drinks, puddings, or for additional servings of the drink.

To make the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Premix (makes 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Instructions
Making the Syrup: Place all the items inside a pan, bring to a gentle boil, stirring so the sugar melts. Then, take off the burner and let it to cool fully. Transfer to a clean bottle, cap it and store in the refrigerator, it can be stored for about one month.
To make Cocktail Base: Pour every liquid ingredients in a sizeable container, allow it to infuse for an hour, then filter it best through cheesecloth, so it's perfectly clear.
To serve: Measure 85ml of your batch mix to a mixing glass filled with ice, gently stirring gently for a minute to chill. Pour into a chilled martini glass or a similar vessel, decorate with a few cranberries and complete it with a light spray of mandarin oil above the glass.
